Avocado Prawn Stacks

If you like Sushi, these Prawn stacks are so delicious and full of nutritious goodies. You can adjust them how you like, with or without spicy sauce.

What you'll need: 

Makes 2 stacks 

  • Brown Rice - White Rice is also fine  
  • Rice Vinegar 
  • 20x frozen Prawns (approx) - I usually buy Raw frozen
  • 1/4 Cucumber 
  • 1/2 - 1 Avocado 
  • 1 T Mayo 
  • Sriracha Sauce (hot sauce) - to taste 
  • Soya Sauce 
  • Furikake*  

 

Cook your Rice first - for a quick dinner I like to use the Quick Cups, once cooked, mix through a splash of Rice Vinegar to taste. 

Thaw your Prawns then poach in salted water until cooked through. Chop into small pieces. Set aside. 

Mash your Avocado, dice up Cucumber and add mix together.

Mix together Mayo & Sriracha sauce. 

In a 1 cup measuring cup, spoon in your Avocado & Cucumber mix, pressing flat. Next add chopped Prawns, press flat, following by final layer of Rice, pressing flat.

On a plate, carefully flip the cup upside down, you may need to give the bottom a gently tap. (If possible, use a Cup that's shallow in height, this will make it easier to get out when you flip it over).

Drizzle with splash of Soya Sauce and a dollap of Spicy Mayo. 

Lastly, sprinkle on your Furikake to taste if using.

*Furikake is a Japanese condiment, it's usually a mix of seaweed, sesame seeds, salt, sugar and sometimes contains bonito & other spices - you should be able to pick up up from local Asian grocer
